Sapporo style ramen which is distinguished by the Chintan stock; a clear broth made with quality Pork, Beef, and Chicken that requires over 16 hours of carful preparation to achieve its delicate yet complex depth. Our Noodles are custom made for us by Nishiyama Seiman Company in Sapporo, Japan.-
All of our ramen with the exception of veggie come with egg based noodles, garlic, onions, bean sprouts, ground pork, chashu, nori and scallions.

Spicy Shoyu
To make a spicy ramen with a shoyu sauce base was a bit tricky. Unlike miso, the aromatic quality of the shoyu is a bit more delicate and fragile. We were very careful in finding the right "spiciness" that balanced well with the quality of shoyu.

Vegan friendly. A mix of kombu (seaweed) and vegetables for the stock and mixed with miso as a base. This ramen bowl is full of flavor.
